Serves 6 · 35 minutes
Why it's healthier: Two tablespoons of oil, one stock cube, and lots of okra and fresh fish.
Ingredients
- 20 fresh okra, chopped
- 500 g fresh fish or 1 tin of sardines in water, drained
- 2 tablespoons of palm oil
- 2 onions, 4 tomatoes, 2–3 fresh pepper
- 1 tablespoon of ground crayfish
- 1 small stock cube
Method
- Fry the onion gently in the palm oil. Add the blended tomatoes and pepper and cook for 10 minutes.
- Add the fish, crayfish and stock cube with a cup of water. Simmer for 10 minutes.
- Add the okra and cook for 5–8 minutes, until just soft.
Tips
- Eat with banku or kenkey: one fist is a portion.
- Tinned fish is salty: you may not need the stock cube.
