Hausa koko with less sugar
Serves 4 ยท 20 minutes (plus soaking)
Why it's healthier: One teaspoon of sugar a bowl instead of three, with ginger and spices for taste, and groundnuts for protein.
Ingredients
- 2 cups of millet flour (or fermented millet dough)
- 1 thumb of ginger, 4 cloves, a pinch of grains of selim (hwentia)
- About 1.5 litres of water
- 4 teaspoons of sugar (1 per bowl)
- A handful of roasted groundnuts per bowl
Method
- Mix the millet with the blended ginger and spices and a little cold water to a smooth paste.
- Boil the rest of the water. Stir the paste in slowly, stirring all the time so it doesn't lump.
- Cook on low heat for 10 minutes, stirring, until thick.
- Serve with one teaspoon of sugar a bowl and groundnuts on the side.
Tips
- Cut the sugar a little more each week: your taste changes in 2 to 3 weeks.
- Koose (bean cakes) with it adds protein; bake or grill them if you can.
