Groundnut soup with chicken
Nkatenkwan
Serves 6 · 1 hour
Why it's healthier: No added oil (the groundnut paste has its own), one stock cube, chicken without the skin, and garden eggs for more vegetables.
Ingredients
- 1 kg chicken, skin removed, cut
- 1 cup of unsweetened groundnut paste
- 2 onions
- 4 tomatoes
- 4 garden eggs
- 2–3 fresh pepper, 1 thumb of ginger
- 1 small stock cube
- About 2 litres of water
Method
- Season the chicken with ginger and onion and steam it for 10 minutes.
- Boil the tomatoes, garden eggs, pepper and onion until soft, then blend them.
- Mix the groundnut paste with a little warm water until smooth.
- Add everything to the pot with the water and the stock cube. Simmer for 40 minutes, stirring now and then, until the oil rises.
- Spoon off the oil that rises to the top before serving.
Tips
- Eat with one fist of omo tuo or fufu.
- Choose groundnut paste with no added sugar or salt.
